Before you cook plov: choosing and measuring your rice

Prepare for plov by reading the rice packet, checking recipe instructions and keeping useful notes about rice, liquid and cookware.

Rice preparation is easier to understand when you separate general rice advice from the method for your particular plov recipe. The type of grain, its packaging instructions and the rest of the dish all matter.

Read the rice packet before cooking plov

USA Rice recommends following the package instructions and notes that rice types differ in liquid requirements and cooking time. It also explains that rinsing enriched American white rice can remove added nutrients. That is a reason to check your packet rather than applying an unconditional washing rule to every grain. Do not treat plain-rice ratios as a plov formula

A saucepan of plain rice and a layered pot containing meat and vegetables are different preparations. Use a recipe written for your chosen method. If it calls for rinsing or soaking, check that instruction against the rice you bought and understand what the author is trying to achieve.

Measure deliberately. Keep weight measurements in grams and volume measurements in the specified cup or jug. A number written as “one cup” is not automatically the same quantity as “one mug”. Mixing those systems mid-recipe makes the result harder to interpret.

Make the next attempt easier

Record the rice brand, dry quantity, recipe source, pot size and any deliberate adjustment. After serving, note the texture in plain language: tender, firm, sticky or uneven. Avoid changing several things at once on the next attempt, or you may not know which change helped.
