A well-cooked pot still needs careful handling after the meal. With leftover plov, rice safety is a practical part of planning, not something to decide from the smell the next day.

Cool and store cooked plov safely

The Food Standards Agency advises cooling leftover rice quickly, ideally within one hour, and dividing it into smaller portions. Do not leave the full cooking pot on the counter to cool slowly while the evening continues.

Set out suitable containers before serving so that leftovers can be handled promptly. Label the time and date. Keep the cooled food in the refrigerator rather than leaving it near a warm stove.

Use the rice guidance

The FSA advises keeping refrigerated rice no longer than one day before reheating and reheating it only once, until steaming hot throughout. This is the rice-specific guidance used for this article; do not substitute a longer generic leftover rule without checking local advice.

Heat only the portion you intend to eat. Break up cold clumps so that the centre can heat evenly. The FoodSafety.gov chart gives 74°C / 165°F for leftovers as a thermometer reference.
